There's a great article in today's New York Times Travel section about visitors eschewing traditional guidebooks and getting their tips from locals or other travelers instead. One of the guys quoted in the story mentions that he gets the New Yorker food issue and just makes a list of all the restaurants mentioned - definitely something that Kurtis and I have done before heading off to NYC.
Getting advice from locals is especially good for finding cool restaurants that aren't super-expensive. They tend to be smaller, newer places so they probably wouldn't have made it into the guidebook anyway. Once you find a place you like, keep the ball rolling by asking the staff where you should go the next night - servers in good restaurants usually know their food and wine, and tend to eat out a lot. Having trouble even finding that first restaurant? Ask one of the staff at a cool store or gallery that you like the look of.
Whatever you do, don't ask the concierge...
